Former White House Pastry Chef Reveals Secrets of President Obama's Favorite Pies

INSIDE EDITION went into the kitchen with former White House pastry Chef Bill Yosses who reveals the secrets behind his pies that the president says are as addictive as crack.

Bill Yosses is the ex-White House pastry chef who inspired this presidential remark earlier this week, “We call Bill ‘The Crust Master’ because his pies, I don't know what he does, I don't know if he puts crack in them.”

The joke drew this rebuke from the first lady, “There is no crack in our pies.”

Yosses told INSIDE EDITION's April Woodard what he felt about President Obama's comment saying, "I love it. I think he loves it too. I think he is kind of putting us on a little bit."

Now Yosses, who stepped down as White House pastry chef after seven years, is speaking out to INSIDE EDITION.

He said, "I think if the president just had the pie dough, I don't think he would know there is no filling. He just really likes the flaky crust."

So, we had to ask exactly what's in the pie that the president finds so addictive?

He said, "There is not much sugar in the recipe. The pie dough doesn't need to be sweet and it shouldn't be sweet."

He whipped up the president's favorite nectarine pie for me starting with the flaky crust that inspired his nickname, "Crust Master."

The recipe just for the crust is:   

2 1/2 sticks of unsalted butter
7 tablespoons of heavy cream
3 3/4 cups of flour
3 teaspoons of granulated sugar
1 1/4 teaspoons of salt.

He said, "There is one other thing, I suppose we can call it a secret, I put a little bit of lard in the pie dough. That word, I know is a turn off to people."

Woodard said, "So is crack. Is there crack in this pie?"

Yosses replied, "You will think there is. It is so good!"

The delicious filling contains:  

8 cups of nectarines
1 tablespoon of lemon juice
1/2 cup of granulated sugar
1/4 cup of brown sugar
1/2 teaspoon of salt
4 tablespoons cornstarch
1 tablespoon of brandy
1 teaspoon of vanilla extract
1 egg white 

To get rid of the nectarine skin, he said, "To get rid of the skin, there is a really fast way to do it. You plunge it in boiling water for about 20 seconds. Then, you plunge it into ice water and the skin comes right off."

The pie doesn't contain crack, but it's plenty sweet.   

When Yosses announced his resignation, there was speculation that his sweet desserts clashed with Michelle Obama's healthier eating initiatives. He's now setting the record straight, saying, "There is no truth to that. I consider her and I hope she considers me a partner on the healthy cooking plan."

When the president's favorite pie came straight out of the oven, Woodard tasted it and found out, it is addictive.
